做法
1. | 豬肉切去白筋和肥肉的部份﹐切成 5cm 細絲。蔥和青椒洗乾淨後和薑一起切成 5cm 細絲。 |
2. | 肉絲用基本醃料醃 10 分鐘。要炒前拌入 1 大匙油。 |
3. | 炒鍋燒熱後加入1大匙油。 倒進肉絲炒到變白後馬上盛出﹐大約8分熟。 |
4. | 原鍋加熱1大匙油。倒入青椒﹐蔥絲和薑絲﹐鹽和糖快炒到青椒脫生。加入肉絲拌炒數下後即可起鍋。 |
PROCEDURE
1. | Cut any fat or tendon off the pork. Cut the pork into 2" thin strips. Wash the scallions and green pepper. Cut the green pepper, scallions and ginger into 2" juliennes. |
2. | Marinate the pork strips with the Basic Marinade for 10 minutes. Mix the pork with 1 tbs. of oil before stir-frying. |
3. | Heat 1 tbs. of oil in a wok. Add the pork strips and stir-fry until they turn white, approx 80% done. Set the pork aside. |
4. | Heat 1 tbs. of oil in the same wok. Add the green pepper, scallions, ginger, salt and sugar and stir-fry until the green pepper strips are cooked but still crispy. Mix in the pork strips and stir several times. Sever hot. |
